For us, the origin of the raw materials is of paramount importance. The milk of the cows that graze on the mountain pastures, the fruits and mushrooms of our forests, the meat of the animals that live in our mountains, the cheeses and cured meats prepared with great skill by the farmers are the basis of the success of our dishes.
