There are many ingredients that make Simone Cantafio’s journey a special dish. They are simple elements that have to do with concepts such as nature, seasons, flora, human respect, sensitivity, and harmony. After his long stay on the island of Hokkaido in Japan, at the helm of the two Michelin-starred restaurant Michel Bras Toya, his own philosophy of dealing with food emerged. . Since December 2021, Simone Cantafio has been the new Chef at "Stüa de Michil" in the Hotel La Perla

Tortellini

filled with mountain potatoes, graukäse and wild herbs, broth of roasted onions, bacon and Yuzukoshō.

 

A dish that celebrates tradition with a personal twist: tortellini filled with Puster Valley potatoes in a toasted onion broth, slowly cooked to enhance its nuances. The touch of vivacity comes from yuzukosho, inspired by my time in Japan.
