Cristian Fagone, born in 1988, has had a highly prestigious career, gaining experience in some of the most renowned restaurants, including Pomiroeu, Miramonti L’Altro, and Le Calandre. His cuisine is deeply linked to his Sicilian roots, which is clearly reflected in the flavors of his dishes. At the age of 29, after several years in working in different restaurants, he decided to open his own restaurant “Impronte” in Bergamo.

Lamb skewer, celeriac and salmoriglio

The lamb is a traditional dish of the region. The intensity of the meat is enhanced by grilling, combined with crunchy celeriac and salmoriglio.  A typical Sicilian sauce, as a connection to the chef’s roots.
