Antica Osteria Nonna Rosa, Vico Equense (NA)

 

Peppe Guida was born in 1965 in Vico Equense, in the house that now hosts his restaurant, Antica Osteria Nonna Rosa. He learnt to cook by watching his mother Rosa, a skilled cook. His culinary career began almost by chance while working in a hotel in Bermuda. On his return to Italy, he opened a rotisserie-pizzeria in his childhood home, which became a renowned tavern for its traditional cuisine. In 2010, he started a small farm with an organic vegetable garden that supplies the restaurant with fresh, high-quality vegetables. His cuisine, rooted in popular tradition, is characterized by excellent ingredients and contemporary preparations.

Pasta and mountain potatoes

with strawberry tree sauce, black truffle, porcini powder, and pine moss

 

With this dish, the chef combines the Neapolitan tradition of pasta and potatoes with the flavors of the mountain forest. The pasta is a link to the chef's roots, while porcini mushrooms, truffles and pine moss give the dish its unique character.
