Born in Salerno in 1974, Viviana Varese grew up in her family's restaurant, where she developed a passion for cooking from an early age. At the age of 25, she opened her first restaurant, Il Girasole, while continuing to hone her skills through pastry courses and masterclasses. In 2007, she opened Alice in Milan, which quickly became famous for its high-quality seafood and meat dishes. In 2010, she was recognized as a young emerging talent by Gambero Rosso and named “Chef of the Year”. Viviana's cuisine is a harmony of Mediterranean tradition and innovation, combining high quality and creativity in an environment run by an all-female team.
