Simone Padoan

Born in Verona in 1971, Simone Padoan grew up in a family that knew all about flour and yeast and started working in his brother's pizzeria at a young age. He opened his own restaurant in 1994 and revolutionized pizza by introducing haute cuisine concepts. Padoan’s innovative approach, focusing on top-quality ingredients and refined techniques, has earned him recognition as a pioneer of gourmet pizza.

Burrata and Culatello di Zibello

During a motorcycle trip to San Quirico d'Orcia, Simone found the inspiration for the signature dish of I Tigli. There, he tasted a simple unsalted bread topped with burrata and Tuscan ham. Years later, he turned that unforgettable flavor into his famous pizza.
